Sie erfahren, wie Sie Ihr Likörchen GANZ groß rausbringen und wie Sie als Bartender ein hoffentlich unverschämtes Preisgeld abkassieren. Also, halten Sie durch.... Letzte Woche habe ich im Tasting Room einer Dame einen Pear Fizz serviert. Das Getränk als solches ist keine wahnsinnig kreative Erfindung. Es ist ein New Orleans Fizz - modifiziert. Etwas weniger Zucker, deutlich bis gar kein Gin (je nach "Stärke Wunsch") und dafür die dementsprechende Menge an Gabriel Boudiers "Liqueur de Poires William". Den Drink servieren wir seit einiger Zeit im Tasting Room. Er ist, aus "Mixologen" Sicht, kein Treffer. Kein "richtiger" Alkohol, dafür verpönter Likör - was soll das? Nun, die Sache ist ganz einfach_ Er schmeckt. Und zwar sehr gut. Er ist ein beeindruckend birniges Geschmackserlebnis.  Er hat weniger Alkohol, was in der Regel mehr Konsum zulässt. (Be

DIAGEO invited me to be part of the World Class Nordic Semi Finals in Stockholm this monday. I will give a presentation for the attendees and be part of the jury. The Ladies and Gentleman fighting for the WORLD CLASS finals coming from Sweden: Johan Mattsson, Viktor Eriksson, Abdallah Ghostine, Jimmie Hult, Ludvig Eriksson, André Berlund, Emil Areng, Erik Andersson, Jesper Hartmann and Elias Wennberg. Today I read an article about Japanese Whisky - from the time "before" last Friday. As we bartenders know, Japanese Whisky is one of the best ones in the world. In such a short time, the japanese whisky is today Top of the world. And for sure, there are much more urgent question these days, but while reading the article I thought, how about the future of Japanese Whisky? One Distillery, Miyagikyou, is not far away the Tsunami area and also the broken nuclear plant. As I could read online today, that the people working in this distillery are ok - which is a good news. But now, that the nuclear problems are running out of control, I guess, japanese whisky aged from 2011 in japan, will lose most of its value. The Warehouses near to the broken power plants, but also the category in general will be affected by radioactivity. As

Barrel aged Cocktails: First batches of "Int. Padovani Cocktail" & Negroni at THE TASTING ROOM

"Clear Water - after 60 hours aging" So, after 60 hours of watering my first two new made limousin oak barrels, it was time to fill them. I decided to go for two drinks. Padovani and Negroni. First of all, I had to empty my water soaked barrels. Damn, and I made a surprise. The cristall clear water changed to amber, golden water. In just 60 hours. Smell like Wood, taste like Wood. The producer recommanded 24 to 48 hours of watering but I didn't made it on Sunday to the bar, so finally it was around 60 hour. And also, I get a little bit respect for my Idea to use NEW limousin barrels. Jeffrey and all the other I read about, started with used Whisky/Port etc. barrels. The NEW oak may give a real big impact to the liquid inside and I am a little bit afraid, that it is hopefully developing into a tasteful expirience. Watering the barrels.... This days, I started to produce barrel aged cocktails at LE LION | THE TASTING ROOM. Four barrels are set up this days, more will follow. The first three drinks will be a Padovani Cocktail, a Negroni and the famous Trident Cocktail. The one and only Master of Barrel Aging - Mr. Jeffrey Morgenthaler is the inspiration for the Lions barrel aged Cocktails. First of all, I started to water the new, unused limousin oak barrels. It takes to days for them, to soak full of water. After this, I will start with the first barrels and age cocktails. I think, the new, unused barrel will have a ind of big impact to the drinks.  And I think, it won't take to long, to have a result in the barrel. So, stay tuned for our first batches of barrel aged cocktails. Will keep you updates with all the experience we make.

Our Gold Nuggets.... Sometime, life is easy. You get a call from a company witch products you love! Why you love them? Because they make your daily business so easy. Gold Production at Le Lion Two month ago, Leoni Jansen from Hoshizaki gave me a call and asks me, if I like to work together with Albert Van Beeck Calkoen to present Hoshizaki at INTERNORGA. So, I meet  Leoni and Albert at the HORECA in Amsterdam and we made a nice deal. Albert and me will be on Stage of the Hoshizaki Stand at INTERNORGA this year and will show you great drinks (Thanks to Bacardi and Bombay Sapphire for support). In Kürze: So ein übler Zapfologe wollte eine 1 € Party organisieren (und eine 10 Drinks für Zehn Euro Party). Das Verwaltungsgericht hat ihm dies verboten: "Die "1 Euro-Party" begründe für die insbesondere jugendlichen Besucher der Veranstaltung eine hinreichend konkrete Gesundheitsgefahr. Denn das Preiskonzept "viel Alkohol für wenig Geld" könne die vom Antragsteller speziell angesprochene Zielgruppe der Jugendlichen und jungen Erwachsenen dazu veranlassen, Alkohol im Übermaß zu konsumieren. Dies gelte erst recht für die "10 für 10"-Veranstaltung. Es gibt seit Jahren ein paar "Nicht-Bar-Cocktail"bezogene Blogs auf meinem RSS Reader (ja, ich benutze so etwas noch). Glücklicherweise werden es sogar mehr. Einer davon ist der Blog von Seth Godin. Seth gibt nur sehr kurze Gedankenanstöße aus dem täglichen Leben und transformiert Sie in seine Business Welt. Und ich nehme seine Anstöße und transformiere Sie in meine kleine Bar Welt. Vor kurzem war es dieser hier "‎Pleasing everyone with our work is impossible. It wastes the time of our best customers and annoys our staff. Forgive us for focusing on those we're trying to delight." Großartig. Leitspruch für meine Le Lion Idee. Allerdings, kann und wird dieser Ansatz gerne einmal von Bartendern missverstanden. Es geht nicht darum, Ihrem Gast am Abend das Gefühl zu geben, er passe nicht in "unseren" Fokus und Ihn arrogant zu behandeln. Wichtig vielmehr ist, konzeptionelle eine solche Fokussierung durchzuplanen und als Betreiber nicht nervös zu werden,

Eine immer größere Zahl an Spiced Rum's ist seit einiger Zeit auf dem Deutschen Markt erhältlich. Für den Connaisseur und Bartender stellt sich die Frage: Ist Spiced Rum eine geschmackliche Offenbarung oder doch eher eine Art simpler Ready To Drink Mix für den Rum Cola?   Der Frage möchten wir am 11. Meine Herren, was war das eine Aufregung. Christina Schneider hatte mir hier im Mixology Blog bei der Frage nach dem Ups and Down in der Branche ein wenig aus der Seele gesprochen. Downs: "Bartender die Hüte in geschlossenen Räumen tragen"... Nun will ich unsere Hut Fetischisten gleich etwas Wind aus den Segeln nehmen. Selbstverständlich soll jeder machen was er will. Und selbstverständlich gibt es Personen, die so etwas tragen können. Herrn Heuser kann ich mir eigentlich nur mit Ht hinter der Bar vorstellen. Und Herr Etzold. COCO ohne Hut? lächerlich! Halb Frankfurt ist ohne Mütze am Brett nur schwer vorstellbar... Und dennoch danke ich Frau Schneider, das ganze mal wieder ins rechte Licht gerückt zu haben. Denn so grundsätzlich finde ich die eine oder andere Schiebermütze hinter der Bar nicht passend. Manchmal wirkt es dann doch zu aufgesetzt. Die Mütze allein macht noch keinen guten Drink und erst lange keinen guten Bartender. Aber, wie gesagt, jeder wie er will. Am
